Quality of Provisions
Document 1795Notification that contractors demand number of provisions but that number of troops at several different posts is difficult to determine. Mentioned inspection of pork and beef for quality and prevention of spoilage. Canadian pork of higher quality than that packed locally.
Pittsburg 21st August 1795 Sir The Contractors have demanded to know the quantity of Provision that may be required of them at Pittsburg during the term of their Contract and as Colo. Butler is not yet possessed of sufficient Information respecting the number of men to be 225 employed & stationed at the several Posts depending for Supplies on Pittsburg, I am under a necessity of requesting the necessary information as early as possible. In a former Letter I took the liberty of Suggesting that considerable Advantages would result to the United States by an Inspector of Beef & Pork being Appointed at this Post by legal Authority, and I am still further convinced of the Advantages by recently Comparing at Presqu’isle Pork Cured & packed in Canada with that put up in the Neighbourhood of this place the Canada Pork being greatly superior in Quality.
